How do you freeze herbs in oil?

You like to buy fresh herbs but find that they wither and brown too quickly? Freeze them in portions! We've already given you this tip, but here's a smarter one: freeze your herbs in oil.

Here’s how to do it
  • Choose “hard” herbs such as rosemary, sage, thyme and oregano. They react best to freezing; “soft” herbs such as mint, basil and dill are less suitable and it is better to use them fresh.
  • You may decide to chop your herbs beforehand, cut them, or leave them whole in the cubes. You can also combine the different methods.
  • Pour extra virgin olive oil or melted butter into the ice cube shapes in which you have placed your herbs. Oil is really what we prefer.
  • Cover with cling film and put in the freezer overnight. The next day, unmould the cubes and store them in a freezer bag (label them, it's more practical!)
  • Use one or two cubes to prepare soups, stews, sauces and more. Yummy!
