When it comes to Italian cooking, tomato is the undisputed queen. And you certainly don’t always need fresh tomatoes to put tasty dishes on your plate. The delicious tomato flavour is often better reflected in soups, pastas, stews, etc. when you’re using tomato concentrate, peeled canned tomatoes, and passata.
